Description
Vigo's 27 litre stainless steel pasteuriser is a vital piece of gear if you're looking to store cider or apple juice. Juice can typically be kept for about 2 days before it starts to ferment, but with this pasteuriser it can be kept for up to 2 years. It can also be used to pasteurise naturally sweet cider, or cider with sugar added after fermentation (to prevent further fermentation).
Adjustable dials allow you to set the temperature and for how long (see below). The powerful 1800W heater ensures that the pasteuriser will reach the desired temperature quickly, and maintain the temperature with ease.
The Vigo Pasteuriser is versatile: it can be used for mulling wine, yoghurt making, storing and dispensing hot liquids at functions, or as a brewing kettle for making beer.
The unit features a dispensing tap and a plastic grid to place bottles on. The grid insert ensures circulation of heated water underneath the bottles.
The stainless steel tank allows for easy cleaning.

Instructions for use:
Pasteurising - bottle or preserving jars:
Fill the bottles or preserving jars to within 2.5cm / 1" of the top with clean, prepared juice or food (peas and beans keep longer if blanched first). Ensure that the bottle caps or rings of the jars are clean and dry. Fit the rubber seal and clip fasten the lids.
Place the bottles or jars on the rack that sits on the base of the tank protecting them from direct heat. Jars can be stacked one on top of another.
Fill the tank with water to within 2.5cm / 1" of the top bottle/jars. Place the lid on the appliance.
Set the temperature gauge and put central alarm switch to the 'on' position.
Put the timer to 'On Continue' setting.
The cooker / pasteuriser will then heat to the set temperature (red light will be on when heating).
When the pasteuriser reaches your specified temperature a beeping sound will be heard.
When beeping set the timer to the required length of time for full and accurate sterilisation. Turn alarm switch to 'off'.
When timer reaches zero a buzzer will sound and pasteurisation is complete.
Pasteurising - bag-in-boxes using a Filling Support Stand:
Place the bag collar into the support stand and fill the bag allowing some room for expansion of the juice to be heated. Exclude - air before the tap is pushed part-way into the collar of the bag.
Place 2 x 5 litre bags or 1 x 10 litre bag onto the pasteuriser rack and set the thermostat. When the water temperature reached the set level there may be more air in the bags - remove the bags, place the bag collar in the Filling Support Stand, take out the tap, expel the air and then drive the tap fully home.
Return the bag to the pasteuriser, set the temperature, place the lid on the appliance and leave for the full pasteurisation time. Allow the bags to cool before packing into the cardboard box. Cooking settings and timings for individual drinks or foods are supplied with the machine.
